How to make this recipe
- Place lentils and 3 cups of water in a medium sauce pan. Bring water to a boil, then reduce heat to low and simmer uncovered for a total of 20 minutes. Remove from heat and drain very well. The less water in the lentils the crunchier they will be.
2. Once lentils are almost finished cooking, preheat oven to 425 F (if possible use convection roast as it cooks more evenly and help better crisp up your lentils).
3. While lentils are cooking combine onion powder, garlic powder, paprika, salt and olive oil in a medium mixing bowl.
4. Next add cooked lentils to oil and spice mixture and coat well.
5. Evenly arrange lentils on baking sheet lined with parchment paper for easy clean-up.
6. Roast lentils for about 17 minutes or until desired texture is reached. I like to toss mixture once half way through roasting cycle.

To help crisp your lentils you will want to remove additional moisture before roasting, spread lentils as evenly as possible on a paper towel or kitchen towel. Place another towel on top and gently press down on lentils a couple of times.

Very unique! I usually make roasted chickpeas but I thought I would give this one a try. Now it’s gonna be a tough decision if I want to make chickpeas or lentils. Maybe I will just do both
